The Simplest Egg Drop Soup Recipe You’ll Find Anywhere

Egg drop soup is one of the easiest recipes you’ll ever make. It’s also a great way to use up leftover chicken or turkey, which is what I did here. I was inspired by a recipe from Jeanette’s Healthy Living, which uses lean ground beef instead of chicken. But since I’m not a big meat eater, that wasn’t going to work for me! So my version features leftovers from Thanksgiving dinner and tastes just as delicious too.

1 Tbsp. cornstarch

Add 1 tablespoon cornstarch and stir until dissolved.

Cornstarch is used to thicken the soup, so you’ll want to add just enough to get the desired consistency. If you’re using store-bought stock, start with 1 tablespoon; if you’ve made your own broth from scratch and want a thicker soup (which we recommend), use about 2 tablespoons instead. You can always add more later if needed; once it’s cooked into the broth there’s no going back!

3 cups chicken broth

A good option for this soup is chicken broth. It’s easy to find and pretty inexpensive, but you can also make it vegetarian by using vegetable broth instead. If you want to get fancy, try beef or pork broth instead of chicken–or even fish!
