You’ll want to use three ripe bananas in this recipe, but they shouldn’t be overripe. If you don’t have enough ripe bananas on hand, add 1/4 cup flour to the batter and reduce the amount of sugar by 1 tablespoon (to make up for the extra dryness).

Use whole milk.

  • Use whole milk. Whole milk gives your muffins a richer taste and is more nutritious than low fat or skim. You can also use buttermilk, or a combination of whole milk and buttermilk; this will give you muffins that are slightly more tender than those made with just plain old milk.
