Gather the ingredients
Before starting the cookie making process, it is important to make sure you have all the necessary ingredients ready. To make these oatmeal raisin & craisin cookies, you’ll need 1/2 cup (114 grams) of butter at room temperature, 1/3 cup (80 grams) of granulated sugar, 1 large egg, 1 teaspoon (5 ml) of vanilla extract, 1 cup (130 grams) of all-purpose flour, 1 teaspoon (7.75 g) of baking powder, ½ teaspoon (3 g) of salt and ½ teaspoon (2.5 ml) of ground cinnamon. Also make sure to grab ½ cup (90g) each of raisins and craisins for a delicious cookie treat!
Preheat the oven and prepare cooking sheets
Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper and set aside. This will help the cookies bake evenly and prevent them from sticking to the sheet. It is highly recommended you double up on parchment paper or use a silicone baking mat for even better results.
In a medium bowl, whisk together the Flour, Baking Soda, and Salt. Set aside. In a separate bowl, use a hand mixer set on high speed to cream together the Butter and Brown Sugar until light and fluffy. Add in the Egg and Vanilla Extract, mixing until combined. Carefully mix in dry ingredients that were previously set aside into wet ingredients. Stir in Oats, Craisins and Chocolate Chips with a spoon or spatula until everything is evenly combined. Drop heaping tablespoon-sized balls of dough onto prepared baking sheets about 2 inches apart from each other. Make sure to press down slightly with your fingers if you want cookies to look nice after being baked up! Bake for 10-12 minutes or until golden brown. Allow to cool for 5 minutes before transferring to a cooling rack so they can cool completely before you enjoy!
Cream together butter and sugar until light and fluffy
In a mixing bowl, cream together the butter and sugars until light and fluffy, approximately 3 to 5 minutes. You should notice the sugar no longer has any granules and will be creamed together with the butter. This is an important step as it allows your cookies to be soft in the middle and have a slight crunch on the edges. Beat in eggs, one at a time, stirring until combined after each addition.
Beat in eggs, vanilla, flour, baking soda and salt until just combined
Once the eggs have been added and combined, add in the vanilla extract. Beat until all of the ingredients are fully incorporated into the dough. Slowly add in the flour, baking soda and salt until just combined, scraping down the sides of the bowl as necessary. The dough will thicken right away because of the added flour. Finally fold in oats, raisins and craisins, being sure they are evenly mixed throughout.
Stir in oats, raisins, and craisins until evenly mixed throughout dough
With a wooden spoon or rubber spatula, stir in the oats, raisins and craisins until evenly mixed throughout the dough. Be sure to combine the ingredients together well so that no large pieces remain. Finally, use a tablespoon measure or small ice cream scoop to place equal amounts of cookie dough onto prepared baking sheets, spaced about two inches apart from one another. Enjoy!
