This Thai-inspired egg roll recipe is vegetarian, easy to make and tastes great! It can also be made ahead of time so it’s perfect for parties or family gatherings.

Cooking Instructions: Coat a large skillet with oil, then heat over medium-high. Saut? the carrots until they’re just tender, about 2 minutes. Add cabbage, scallions, and garlic; saut? until soft (about 5 minutes). Add tofu and cook until browned on one side (about 4 minutes). Pour egg mixture over top of veggies to steam them slightly before folding in half to fit into your spring roll wrapper. Wrap tightly with plastic wrap or parchment paper; chill for at least 30 minutes before serving so you can slice it easily!
