- 1 pound boneless, skinless chicken breasts
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons olive oil (or vegetable oil)
- 1 medium onion chopped
- 3 cloves garlic minced
- 2 tablespoons chili powder
Place the chicken, onion and garlic in a slow cooker. Add the tomatoes, broth, and water; cook on low for 6 hours.
Add corn and black beans at the end of cooking time; stir to combine with other ingredients.
Stir in cilantro just before serving (it will wilt if added earlier).
